Marvelous Mojito Monday...

Its been a while since I posted a really fabulous drink recipe, but I was surprised by a gift of this refreshing delight on Australia day and just had to share.....so here is Simone Scribbles with her awesome Mojito (and check out her blog while you are at it - hilarious !!!)

 
 

Make the mint infused sugar syrup by dissolving a cup of water and a cup of sugar on the stovetop.  When it’s dissolved, add about 6 mint leaves and let the mint linger for half an hour or so.  Take out the leaves and put the syrup in the fridge until you make the mojitos.

 

Mojito

Put 1-2 ounces of sugar syrup in a glass.  Add about 6-8 mint leaves and stir. 

Fill the glass with crushed ice (it has to be crushed otherwise the mint leaves get to the top and it’s gross).

Add 1-2 ounces of white rum

Add the juice of about half a lime

Top up with soda water

 
Garnish with a slice of lime.

Tip – to make it seem extra fresh … before you add the slice of lime run a mint leave around the rim of the glass so it smells minty!

Blueberry Buck - perfect summers evening drink......

 
As you celebrate the first day of the year, consider making this great little cocktail. I had a crack at it last week and found it to be quite potent !! (But anything is potent when you probably only indulge in say, 3 cocktails a year !!!)

The Hendrick's 'Blueberry Buck'

12 blueberries
4 tablespoons Hendrick's Gin
1 tablespoon freshly squeezed lemon juice
6 tablespoons ginger beer
Ice cubes
1-2 mint sprigs

Combine ingredients, crush blueberries, garnish with mint and celebrate !

Sue's amazing Mai Tai Cocktail (pure divinity !!)



This is my Mai Tai recipe!

 1 oz Bacardi
1/2 oz Coruba dark rum
1/2 oz Disaronno Almond liqueur
1/2 oz orange curacao
1oz orange juice
2 oz pineapple juice

Shake in a cocktail shaker and strain over shaved ice.

Yum!! I want one now!!

One mint julep was the cause of it all..............

How I love this old song! Love of this song inspired me to chase up a Mint Julep recipe online and share it with you here........(thankyou to Gourmet Traveller for this one)



MINT JULEP



Serves 1
10 fresh small mint leaves
30 ml sugar syrup
4 dashes Angostura bitters
75 ml bourbon
1 mint sprig, to garnish



To serve: 1 straw (optional)



1 Chill the glass you intend to use for at least 1 hour beforehand.



2 In a bar glass or shaker, add mint leaves, sugar syrup and bitters and gently stir and press the mint with a bar spoon. The idea is to expose the flavour of the mint without opening up its more bitter characteristics. Add the bourbon and stir to combine. (You can leave this mixture to macerate for 30 minutes or more if you prefer a stronger mint flavour.)



3 Pack the chilled glass with crushed ice and strain the mixture into it, then stir thoroughly, churning the liquid through the ice with a long-handled spoon until the outside of the glass is thoroughly frosted. Perfectionists insist on not touching the cold glass with bare hands, and some obsessives even insist on keeping a glove or cloth between warm hands and cold glasses while Juleps are being prepared.



4 Add more crushed ice and bourbon to fill, garnish with a mint sprig and serve with a straw. (The drink can be refrigerated, ready to go, at this stage – only the garnishing should be left to the last minute.)

This is lovely on a hot summer's evening, and is the official drink of the Kentucky Derby. Sit back, glass in hand, press play on the song below and imagine you are in the deep South! Ahhhhhh .....

One Mint Julep" is a rhythm and blues song written by Rudy Toombs that became a hit for The Clovers. It was recorded by Atlantic Records in New York City on December 19, 1951 and released in March of 1952. It was one of the first "drinking songs" to become a hit and one of the first to feature a tenor sax solo. It was an important step in the history of Ahmet Ertegün and Atlantic Records in its quest to become a hot rhythm and blues label. Stylistically the The Clovers were moving away from the sentimental lyrics of the romantic doo-wop group songs and adapting a cooler group style, emphasizing rhythm more, nearing the style of a jump blues combo.

Toombs was hired by Atlantic to write humorous up-tempo rhythm and blues novelty songs. Atlantic wanted material that was true to life but also funny. The humor in this song comes in part from the idea of a young black man getting drunk on mint juleps, thought of as an aristocratic southern white woman's drink.

Egg Flip

This is such an oldie - but a real goodie !! My children adore this delicious drink, infact we never seem to be able to make enough of it to satisfy us all .......a sure sign of a good recipe !

2 eggs
Vanilla essance (I use a small cap full)
2 Cups milk
4 Teaspoons castor sugar
2 Bananas
Nutmeg
Break eggs into blender, add vanilla and sugar. Blend intredients until frothy. Add milk and bananas and blend again. Pour into glass and sprinkle with nutmeg to serve.

Lemon Juice Refresher

Those lemony drinks are just oh so delightful on a summer day, arnt they? Here is an old fashioned favorite that is sure to tickle your tastebuds.............

Lemon Juice Refresher

½ cup lemon juice
9 Cups water (1 cup hot water to dissolve listed ingredients)
1 Cup Sugar
1 Teaspoon cream of tarter
1 Teaspoon lemon essence

Dissolve ingredients in hot water, add remaining water and enjoy!

Mels' Home made Bailies - YUM


Mel’s Homemade Bailies

1 Cup Scotch
1 Tablespoon instant coffee
1 Tablespoon Chocolate essence
1 Tablespoon Coconut essence
1 Can evaporated milk
1 Can condensed milk

Mix the first 4 ingredients together. Blend in evaporated milk and condensed milk.
Enjoy strait, on the rocks, or with milk.
